1. Tacos

To start our list of Saturday night foods off right, how about a dish that has won over the Mexican palate and that guarantees a lot of crunchiness for your dinner?

Set aside some time for this recipe, because we’re going to teach you how to make a delicious tortilla dough from scratch! If you want to speed up your dinner, just look for ready-made taco tortillas on the shelves of your local supermarket.

The traditional filling uses ground pork, chili or beef with other vegetables and greens to fill it.

  • Preparation time: 1 hour
  • Yield: 4 tacos

Dough ingredients

  • 1 and ½ cups corn flour
  • 4 tablespoons of wheat flour
  • 3 cups of water
  • 2 teaspoons salt
  • 4 tablespoons of olive oil

Filling ingredients

  • 1/2kg meat
  • 3 tablespoons tomato paste
  • 1 chopped green pepper
  • 1 chopped onion
  • 4 crushed garlic cloves
  • Olive oil, salt and pepper to taste
  • Tomato and lettuce to finish (optional)

How to prepare the dough

  1. Bring the water to a boil along with the olive oil and salt.
  2. Add the flours and stir the mixture until the dough starts to come away from the bottom of the pan.
  3. Let the dough rest and start working with it before it cools completely, as it tends to become brittle when handled cold.
  4. Using a rolling pin, roll out the dough and cut out discs using a deep plate to give the tacos a round shape.
  5. With the tortillas already cut, place them one by one in a frying pan with a drizzle of olive oil and let the dough brown a little on both sides.
  6. While the tortillas are still warm, place them on a surface or plate and fold them slightly to form the curved shape of the popular tacos you see on the internet. Use a plate to help you fold the dough or a spatula to fold the dough without burning your hands.
  7. Now, just let it cool a little and use the time to make the super simple filling!

How to prepare the filling

  1. With the pepper, onion and garlic already chopped, sauté them in olive oil.
  2. Add meat and let it brown.
  3. Add tomato paste, salt and other seasonings of your choice.
  4. Want to make the filling creamier? Try blending everything in a blender and filling your tacos with the mixture!
  5. Finish with lettuce and tomato.

2. Yakisoba

  • Preparation time: 1 hour
  • Yield: 6 servings

Ingredients

  • 1 package of spaghetti, tagliatelle or yakisoba noodles
  • 600 g breast fillet
  • 2 carrots
  • ½ broccoli
  • 2 zucchinis
  • 2 leeks
  • 2 chayotes
  • 1 cup soy sauce
  • Butter for sautéing vegetables
  • Salt and oregano to taste

Preparation method

  1. Slice the chicken into thin pieces, the carrots, zucchini and chayote into cubes (the size of the cubes determines how quick the vegetables cook), the broccoli into small florets and leeks into slices.
  2. Place the pasta in boiling salted water to cook.
  3. In a frying pan or wok, add a tablespoon of butter and start to sauté the onion. Sprinkle with oregano and salt, add a little water and cover. Let it soften. When you can pierce the vegetable with a fork, remove from the pan and set aside.
  4. For the zucchini, broccoli, and chayote, follow the same procedure as for the carrots. The cooking time for each vegetable may vary, so add more water as needed to sauté each ingredient. When the fork goes through, set aside. Don’t forget the salt and oregano.
  5. When sautéing the leeks, do not use water or oregano; simply use butter to sauté the slices. Set aside when the strips of leek are “wilted” and golden.
  6. It’s time to grill the chicken strips until they’re golden brown. Don’t forget to season them with salt and other spices of your choice.
  7. Once the chicken is ready, gather all the ingredients together in a large skillet or pot to heat quickly.
  8. Place the noodles with the chicken and sautéed vegetables in a large bowl and mix in the soy sauce. Stir well until the soy sauce is incorporated into the recipe. Now, enjoy!

3. Homemade artisan burger

  • Preparation time: 40 minutes
  • Yield: 6 servings

Ingredients

  • 1 kg of ground beef blend for hamburgers (580 g of chuck and 420 g of ribs)
  • 6 beer or Australian burger buns
  • 6 slices of cheddar cheese
  • ½ box of cream
  • 2 red onions, cut into rings
  • 2 tablespoons of butter
  • 2 tablespoons of soy sauce
  • 2 tablespoons brown sugar
  • Iceberg lettuce (optional)
  • Margarine for sealing the breads
  • Condiments such as mayonnaise, barbecue sauce , ketchup and mustard

Preparation method

  1. Shape the steaks with the blended mixture and make balls of approximately 175 g. Season the burger and, using small plates or saucers, flatten the balls to give them the shape of a burger. Set aside.
  2. Start making the caramelized onions using a tablespoon of butter. Sauté the rings until they are golden or translucent. When they reach this point, add the soy sauce and brown sugar and let it reduce a little. Set aside.
  3. Time to prepare the gorgonzola cream. Use the last spoonful of butter to melt the gorgonzola cheese. When the cheese is melted, add the half box of cream.
  4. Cut the bread and spread margarine on both halves. Place on a griddle or frying pan until golden brown. When all the bread is ready, start adding mayonnaise, barbecue sauce, ketchup or mustard. Choose your favorites.
  5. Finally, it’s time to grill the burgers. Leave it for less time if you’re a fan of rare, that is, grilling for less time than medium-rare steaks.
  6. Once you’ve flipped the burgers, add the cheddar cheese on top of the steak so it melts a little.
  7. Assemble your snack with lettuce, your favorite condiments, steak, caramelized onions and gorgonzola cream. Enjoy your meal!
